Vanilla Blueberry Cake (Serves 8)

For the Cake:

350 g vanilla sponge cake mix

4 eggs

70 ml water


For the Mousse:

150 g vanilla mousse

200 ml milk


For the Topping:

100 g blue topping (blueberry topping)

Colored vermicelli


Preparation:

For the Cake:

1. Mix the vanilla sponge cake mix with the eggs, water, and vanilla. Beat until the mixture doubles in volume.


2. Pour into a greased baking pan.


3. Bake at 180°C for 35 minutes.



For the Mousse:

1. Whisk the mousse powder with milk to achieve a thick consistency.


2. Let the cake cool, then slice it and carve out a trench across the top.


3. Fill with blueberry topping and vanilla mousse.


4. Garnish with colored vermicelli.
